| Chicory | Daisy family |
| Cichorium intybus | Asteraceae (Compositae) |
Chicory is a tough erect plant of roadsides and waste places.
The bright blue flowers are fully open only in the morning, fading in the afternoon.
Chicory used to be widely cultivated: its leaves were used in salads, and its roots were
roasted and used as a substitute for coffee.
