Sea Holly is a bluish-green spiny plant of sand dunes and occasionally shingle beaches. The flower is thistle-like, surrounded by a ruff of spiky bracts. It has waxy leaves to prevent water loss, and deep tap roots to reach and store fresh water. The roots were once candied and eaten as a sweet.
